In this area, the grapes are delivered in plastic crates weighing around 11 kg. In our winery, the bunches are cut in the vineyards exclusively by hand. The cut bunches must arrive undamaged at the wine press, where they are de-stemmed and where the woody part of the bunch is separated to avoid herbaceous notes in the wine. Then, the grapes are crushed and pressed using an automatic press, and the resulting must is pumped to the fermentation tank, which gives rise to the wine in the case of white wines. In the case of red wines, the grapes are pressed once fermentation has finished, together with the must and the skin, because it is in the skin where the colouring substance or pigment that gives the typical tonality of red wines is found.
