TASTING NOTES
VISUAL PHASE: Wine with a chromatic range from amber to mahogany, darker the longer it is aged.
OLFACTORY PHASE:Warm and round, complex and powerful aromas. Pronounced aromas of nuts such as walnuts; toasted vegetal and balsamic notes that recall noble wood, blonde tobacco and dried leaves. You can appreciate spicy notes and hints of truffle and leather.
TASTE PHASE: Tasty and very structured, powerful, round and full-bodied. Its glycerin content makes it soft on the palate, long in the mouth and complex retronasal aromas. They highlight notes of noble wood that provide a very elegant drying finish.
PAIRING: Dishes with character that unfold their full potential. Ideal to accompany red meats and game, meat stews or stews, especially with gelatinous meats such as oxtail or cheek; mushrooms and highly cured cheeses.
SERVING TEMPERATURE: 14º to 16º C. Use a glass of white wine.
CURIOSITIES
The respect that Manuel Aragón had for his clients made him name one of his most beloved wines after one of his most unique clients. Uncle Alejandro was not part of the Aragón family, he was a special client, friend and neighbor of the winery, and Manuel Aragón decided to show the importance that his clients had for him by giving this name to one of his wines. The smelly “Tío Alejandro” is a tribute to the loyal customer, and a sign of the love that Manuel Aragón put into his work, his workers and his clients.
Oloroso Tío Alejandro is a high-class wine, aromatic, full-bodied, with a dark golden color. It comes from the complete fermentation of Palomino grape musts that are selected for long oxidative aging due to the perfection of their structure. The slow loss of water through the walls of the wooden casks promotes a continuous concentration process, which causes the wine to gain structure, softness and complexity. You have to drink it lovingly, in small sips, savoring it in all its greatness.
